Fidencio Mezcal de Pechuga Jalisco Michel Couvreur was a Belgian100% Estate grown Espadin agave in Santiago Matatlan, Oaxaca. Base spirit is the Fidencio Clasico which is macerated with fresh local fruits such as quince, papaya, banana and pineapple, then redistilled with a raw chicken breast suspended in the bell of the still. Stunning aromas, bright fruit notes balanced with rich, earthy wet minerality. Not funky. Fat, creamy texture and an incredibly long finish. Bottled with no dilution at 47% abv.
